Slow Cooker Whole Chicken

This recipe is ideal for weeknights or a relaxed Sunday roast. The slow cooker gently cooks the bird until tender and juicy. Use the low setting when possible for the best texture. You can adapt the seasonings to your taste and serve with rice, potatoes, or roasted vegetables for a complete meal.

Equipment

Ingredients

  • 2 kg whole chicken (adjust size to fit your slow cooker)
  • 1 tbsp olive oil
  • 1 tbsp all-purpose seasoning (or substitute with preferred spices)
  • 4 carrots, cut into large chunks
  • 1 onion, quartered

For the gravy

  • 1 stock cube (optional, for extra gravy)
  • 200 ml boiling water (if using a stock cube)
  • 1 tbsp cornflour mixed with equal water
  • Salt and pepper to season

Instructions

  1. Remove the chicken from the fridge, pat dry with paper towel and allow it to come to room temperature for about 1 hour.
  2. Cut the carrots into large chunks and quarter the onion. Place them in the base of the slow cooker to lift the bird off the bottom and to flavour the cooking juices.
  3. Mix the olive oil with the seasoning and rub the mixture all over the chicken, including under the skin where possible. Tie the legs together if you like to keep a neat shape.
  4. Place the chicken on top of the vegetables in the slow cooker, cover with the lid and cook. For a 2 kg bird we recommend Low for 6 hours. If short on time, cook on High for about 4 hours. Cooking times for other sizes are below.
  5. About 10 minutes before the end of cooking, preheat the oven to 200 °C fan / 220 °C / 425 °F / Gas Mark 7. Lift the chicken from the slow cooker using two forks and allow excess juices to drain from the cavity. Transfer to a roasting tray and surround with the cooked vegetables. Baste with some of the juices from the slow cooker.
  6. Roast in the hot oven for 10–15 minutes, or use an air fryer at 200 °C for 5–10 minutes, to crisp and brown the skin. Check doneness with a meat thermometer: the thickest part should read 75 °C / 165 °F.
  7. Remove the chicken and allow it to rest for at least 20 minutes before carving. Resting helps the juices redistribute so the meat stays moist.

Make the gravy

  1. Strain the leftover juices from the slow cooker into a large pan to remove vegetable solids.
  2. Mix the cornflour with an equal amount of water to make a slurry. Whisk this into the pan while the juices simmer.
  3. Boil gently until the gravy thickens. If there isn’t enough liquid, dissolve a stock cube in 200 ml boiling water and add a little at a time until you reach the desired volume and flavour.
  4. Season with salt and black pepper to taste. If the gravy is too thin, add more cornflour slurry and return to the boil until thickened.

  • Large chicken (2–2.5 kg): Low 6 hrs | High 4 hrs

How to Crisp the Skin

If you prefer crispy skin, finish the cooked chicken under a hot oven grill or in a preheated oven for 10–15 minutes. Brush with a little stock or melted butter before browning for extra colour and flavour.

Carving

Carve on a sturdy board. Slice the breast meat in even slices cutting diagonally from the carcass. Remove legs and wings by gently pulling them away from the body; they should come away easily after slow cooking.

Serving Suggestions

Serve with roasted potatoes, honey-roasted parsnips, Yorkshire puddings, peas and stuffing balls for a classic roast dinner. Generously spoon the homemade gravy over the meat and vegetables.

Storage
