Ingredients

  • 1/2 cup (1 stick) unsalted butter, cut into tablespoons
  • 4 squares (4 ounces) unsweetened chocolate
  • 1 1/2 cups sugar
  • 1/8 tsp. salt
  • 1 can (12 ounces) evaporated milk
  • 2 tsp. pure vanilla extract

Instructions

  1. Place the butter and chocolate squares in a heavy saucepan over low heat. Stir with a whisk until fully melted, then remove from heat.
  2. Whisk in the sugar and salt until evenly combined.
  3. Whisk in the evaporated milk, then return the pan to medium heat. Cook at a gentle simmer, whisking constantly, until the sauce thickens enough to coat a spatula, about 12–15 minutes. Toward the end, you can switch to a spatula for better control.
  4. Remove from heat and stir in the vanilla extract.
  5. Serve warm within an hour, or transfer to a covered container and refrigerate. To reheat, warm gently on the stovetop over low to medium heat or in the microwave in 20-second intervals, stirring between bursts.
  6. The recipe yields about 3 cups of hot fudge — enough for roughly 20 servings.
