These honey roasted Cajun cashews are incredibly addictive and simple to make. The base technique is flexible, so you can easily swap nuts or adjust seasonings to suit your taste.
This version uses cashews tossed in honey, Cajun spice, salt, and black pepper. The balance of sweet honey and warm Cajun spice makes for a delightful snack that’s both crunchy and flavorful.
What equipment do I need?
You’ll only need a baking tray (a large cookie sheet works well), parchment paper, and an oven. These can also be made in an air fryer if you prefer. The preparation is quick, so you can mix and bake them while other dishes are cooking.
Storing these nuts
Store cooled nuts in an airtight container. They should keep for a couple of weeks if sealed properly. If the honey causes the nuts to clump, simply give the closed container a good shake to separate them before serving.

Can I use other nuts and seasonings?

Ingredients
1 cup cashew nuts
2–3 tablespoons honey
¾ teaspoon Cajun spice mix
¾ teaspoon salt
¾ teaspoon black pepper
Instructions
1. Preheat the oven to 350°F (180°C).
2. Line a baking tray with parchment paper.
3. Place cashews in a mixing bowl.
4. Drizzle honey over the nuts, sprinkle the Cajun spice, salt, and black pepper, then mix until the cashews are evenly coated.

5. Spread the coated nuts in a single layer on the lined baking tray.

6. Bake for about 10 minutes, or until the cashews turn golden brown. Keep an eye on them so the honey doesn’t burn.
7. Allow the nuts to cool completely on the tray. The honey coating may cause some sticking while warm; once fully cooled the coating will harden slightly.

TIP: If the nuts stick together in the container, close the lid and shake gently to separate them.
