Makes 24 bites

  • 1 x 225g (7.9 oz) block of halloumi
  • 85g (about 6 slices) prosciutto
  • 100g sun-dried tomatoes (about 6 pieces)

Essential equipment

  • Large baking tray

Instructions

Drain and rinse the halloumi, then pat dry with a paper towel. Cut the block into 24 bite-size pieces.

Rinse the sun-dried tomatoes in a sieve to remove excess oil, then pat dry and slice into pieces similar in size to the halloumi.

Quarter each prosciutto slice. Place a sun-dried tomato piece in the centre of a prosciutto quarter, top with a piece of halloumi, then wrap the prosciutto around it. Place each roll seam side down on a foil-lined baking tray for easy cleanup.

If you’re preparing ahead, cover and refrigerate for up to 24 hours. When ready to cook, preheat the oven to 190°C (fan 180°C) / 374°F.
