Crispy Salmon and Parsley Fish Cakes for Quick Weeknight Meals

I’m excited to share this simple and flavorful recipe for Salmon Parsley Patties. Living in Boise, Idaho, I don’t always have access to the freshest ocean-caught fish, so I often rely on frozen or canned options. While those choices are convenient and tasty, I do miss freshly caught seafood like dorado, halibut, shrimp, and tilapia.

I’m planning a trip back to Ecuador in September (my husband is coming along), and this time we’ll head to the coast. Preston hasn’t seen Ecuador’s coastal region yet—he’s mainly visited the Sierra in the Andes—so I’m looking forward to showing him the beaches and trying plenty of fresh seafood. Description

These Salmon Parsley Patties are a quick, satisfying lunch or dinner option. Serve with your favorite condiments or a simple side salad for a light meal.


Ingredients

  1. 3 (6-oz) cans salmon
  2. 1/2 cup Italian parsley, finely chopped
  3. 1/2 purple onion, finely chopped
  4. 1/3 cup almond flour
  5. 1/4 tsp black pepper
  6. 1 tsp salt
  7. 3 eggs, whisked
  8. 3 tbsp coconut oil (for frying)

Instructions

  1. In a bowl, mix the whisked eggs with the drained salmon until well combined.
  2. In a separate bowl, combine the chopped parsley, chopped onion, salt, pepper, and almond flour. Mix thoroughly, then fold this mixture into the bowl with the salmon and eggs. Shape into 2 even patties.
  3. Heat a skillet over medium heat and add the coconut oil. Fry the patties 4 minutes per side, or until golden and crispy. Serve immediately with desired condiments and sides.
