How to make an Avocado Grilled Cheese

Ingredients (serves 2)

  • 1 medium avocado, ripe but not bruised
  • 4 small, fairly thick slices of bread (white bloomer, sourdough or seeded)
  • 2–3 slices Monterey Jack
  • 2–3 slices sharp cheddar
  • Flaky sea salt, to taste
  • Cracked black pepper, to taste
  • Chipotle or chilli flakes, a pinch
  • Butter for frying
  • Optional: 2 eggs, poached or fried, to serve

Instructions

  1. Prep the avocado: Halve the avocado, remove the pit, peel and slice into thin strips. Set aside.
  2. Assemble: Butter one side of each bread slice. Place two slices butter-side-down in a cold pan. Add Monterey Jack, then layer avocado slices evenly. Season avocado with salt, pepper and chipotle flakes, then add cheddar.
  3. Cook: Top with the remaining two slices of bread, butter-side-up. Turn the heat to medium and cook until the bottom is golden and crisp and the cheese begins to melt, 2–3 minutes. Flip and cook the other side until golden and the cheese is fully melted.
