Lately I realized I haven’t been cooking for groups much this summer. Working from home means fewer office potlucks or gatherings to bring dishes to, and my small apartment doesn’t lend itself to hosting large get-togethers. When I do bring something, I usually prefer a simple homemade contribution—dessert is common, but I love savory items too, especially dips. Dips are my weakness, and this Chipotle Ranch Taco Dip quickly became a favorite.

I’ve been using canned chipotle peppers a lot. I enjoy the smoky heat they add to dishes, and since a can often contains many peppers, I look for ways to use the extras. I’ve stirred chipotle into barbecue sauce, folded it into taco meat, and finally experimented by adding it directly to a taco-style dip.

Traditional taco dip is typically sour cream–based, layered with lettuce, tomatoes, and cheese. To elevate that familiar flavor, I blended chipotle peppers with mayonnaise, garlic, ranch seasoning, lime, and salt, then folded in sour cream for a thick, creamy base. A quick chill helps the flavors meld, and topping the dip with chopped romaine, shredded cheddar, tomato, and green onion finishes the dish with fresh texture and color.

When blending, take care not to over-process; the first time I blended this too long and it thinned into a dressing. The recipe works best when most ingredients are blended to a smooth chipotle mixture, then the sour cream is stirred in by hand so the dip stays thick and scoopable.

Ingredients

  • 1 cup mayonnaise
  • 1–2 canned chipotle peppers in adobo sauce (adjust to taste)
  • 1 clove garlic
  • 2 tablespoons dry ranch seasoning mix
  • 1 tablespoon lime juice
  • 1/4 teaspoon salt
  • 1 cup sour cream
  • 1 cup chopped romaine lettuce
  • 1/2 cup shredded cheddar cheese
  • 1 small tomato, seeded and chopped
  • 2 green onions, chopped

Instructions

  1. In a blender or food processor, combine the mayonnaise, chipotle peppers, garlic, ranch seasoning, lime juice, and salt. Pulse or blend until mostly smooth, taking care not to over-blend.
  2. Transfer the chipotle mixture to a large bowl and gently fold in the sour cream until well combined. Cover and refrigerate for at least 1 hour to let flavors meld.
  3. Just before serving, top with chopped romaine, shredded cheddar, diced tomato, and sliced green onion. Refrigerate any leftovers.
