Ingredients

  • 1 Tin Sweetened Condensed Milk (400g)
  • 3 Cups Desiccated Coconut
  • 1 and ½ Cups Icing Sugar
  • 1-2 Drops Red Food Colouring (optional)

Instructions

  • Grease a 9″ x 9″ (23 x 23 cm) pan and set aside.
  • Combine the condensed milk, desiccated coconut and icing sugar in a large bowl. Stir until well combined — the mixture will be thick and sticky.
  • If you want the traditional pink layer, add one or two drops of red food colouring and mix until the colour is even.
  • Press the mixture firmly and evenly into the prepared pan. Smooth the surface with a spatula or the back of a spoon.
  • Chill in the refrigerator for at least 2 hours, or until firm, before slicing into pieces.
  • Store coconut ice in an airtight container in the fridge for up to one week.
