
In a few short days the U.S. team will be competing for Olympic gold in Rio. I’ll be glued to the TV with the kids watching swimming, gymnastics, volleyball and track and field. Gymnastics has always been my favorite — I never miss an event and I still remember dreaming about competing when I was young.
With so many events on the schedule, I’ve been planning easy, family-friendly meals. We just returned from a short trip to Belize and came home to an almost empty fridge, so a quick stop at Market Street was in order. I filled my basket with Coca-Cola, freshly roasted Hatch chiles, Kellogg’s Rice Krispies and a few other essentials while the kids headed off for smoothies.


Slow cooker meals are perfect for busy weeks — toss the ingredients in, set the cooker, and hours later you have a warm meal ready for the family. After one dinner my husband asked that I make at least one slow cooker meal a week so we have leftovers for him to take to work.

This Slow Cooker Coca-Cola Chicken Sandwich recipe takes under five hours and uses just a few simple ingredients. I served the sandwiches with guacamole, fresh pineapple slices and red onion rings for the adults. We enjoyed Coca-Cola and chips alongside the meal — my daughter never strays far from a grocery-store bag of chips.

Slow Cooker Coca Cola Chicken Sandwiches

Ingredients
- 2 pounds boneless skinless chicken breasts
- 2/3 cup Coca-Cola
- 1/4 cup Worcestershire sauce
- 1 1/2 cups BBQ sauce (I used Salt Lick Original)
- 1 teaspoon minced garlic
- Salt, to taste
- 1 pineapple, sliced into rings
- 1 red onion, sliced
- 2 cups guacamole
- 8 hamburger buns
Instructions
Place the chicken, Coca-Cola, Worcestershire sauce, BBQ sauce and minced garlic into the slow cooker. Cover and cook on high for 4 hours. Remove the lid and use two forks to shred the chicken. Stir, season generously with salt, and cook on high for an additional 30 minutes to let the flavors meld.
Broil or toast the hamburger buns, then assemble sandwiches with pulled chicken, guacamole, pineapple slices and red onion.
