Growing up, my mom made the best meatloaf. I still look forward to it every time she prepares it. This is her recipe, and I’m excited to share it with you.

The loaf combines savory ingredients that complement each other perfectly for a tender, flavorful bite. The sauce adds a sweet-tangy finish while the meatloaf stays moist and never dry. It disappears quickly whenever it’s on the table and often converts skeptics into fans.

Mom’s Best Meatloaf

A simple, juicy meatloaf bursting with flavor and topped with a sweet-tangy sauce.
Ingredients
  • 1 1/2 pounds ground beef
  • 1 cup uncooked, finely chopped bacon
  • 2 eggs, lightly beaten
  • 1/3 cup chili sauce
  • 3/4 cup finely chopped red onion
  • 2 tablespoons minced garlic
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons finely chopped parsley
  • 1 cup oatmeal
  • Sauce
  • 1/4 cup chili sauce
  • 1/4 cup brown sugar
  • 2 tablespoons minced red onion
Instructions
  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the ground beef and chopped bacon.
  3. In a separate bowl, whisk together the eggs, 1/3 cup chili sauce, chopped onion, garlic, salt, pepper, and parsley. Pour this mixture into the bowl with the beef and bacon. Add the oatmeal and mix until evenly combined.
  4. Lightly spray a 5×9-inch loaf pan.
  5. Press the meat mixture into the prepared loaf pan, smoothing the top.
  6. For the sauce, combine 1/4 cup chili sauce, brown sugar, and the minced red onion in a small bowl. Mix until smooth, then spread or pour the sauce evenly over the meatloaf.
  7. Bake for 70 to 80 minutes, or until the meat is cooked through and reaches a safe internal temperature. Let rest a few minutes before slicing.
