Banana Waffles – Perfect for Brunch

If you enjoy banana bread, you’ll love these banana waffles. They capture the same comforting flavor in a soft, airy waffle. You can fold in walnuts or chocolate chips if you like, but they’re fantastic plain with a drizzle of maple syrup.A plate of banana bread waffles ready to serve.

The recipe is simple and quick. Whisk the dry ingredients in one bowl. In another bowl combine melted butter, brown sugar, eggs, vanilla and milk, then stir in the mashed bananas. Gently fold the dry ingredients into the wet mix—don’t overmix—and your batter is ready.

Here are a few tips for perfect waffles:

  1. Use very ripe, brown bananas for maximum flavor.
  2. Avoid overmixing the batter; a few small lumps are fine.
  3. Make sure the waffle iron is fully heated before adding batter; some irons need to warm up between batches.
  4. Cook 1–2 minutes longer for crispier edges.
  5. Keep finished waffles warm in a 200°F oven while you finish the rest.

These waffles come together much faster than banana bread. The batter takes about 10 minutes to mix, and you can cook a full batch in under 15 minutes—no hour-long bake time required.

The waffles are fluffy and moist with a subtle cinnamon and brown sugar note and a clear banana-bread profile. Serve them for breakfast with maple syrup and whipped cream, or treat them as dessert with chocolate chips, caramel sauce, or ice cream.

Ingredients

  • 1 1/2 cups flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 3/4 cup milk (buttermilk, 1% or 2% optional)
  • 2 tablespoons brown sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 3 tablespoons melted butter (cooled)
  • 3/4 cup mashed bananas (about 2 medium bananas)

Instructions

  • Heat the waffle iron according to the manufacturer’s instructions.
  • In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
  • In a medium bowl, whisk the milk, brown sugar, vanilla, eggs, and melted butter. Stir in the mashed bananas.
  • Gently fold the wet ingredients into the dry ingredients, taking care not to overmix.
  • Lightly grease the waffle maker and pour about 1/4 cup of batter into each cavity (or follow your waffle iron’s guidelines).
  • Cook for 4–6 minutes, or until the edges are golden and the waffle is cooked through.

Notes

Serve waffles the same day for best texture. Cooled waffles freeze well and can be reheated in a toaster oven or regular toaster.
