Some mornings there simply isn’t time for a sit-down meal, so I needed a reliable grab-and-go option. These Oatmeal Raisin Breakfast Bars solve that problem: quick to prepare, portable, and made with familiar pantry staples.

Why these oatmeal raisin bars are great

These bars are fast to make—about 10 minutes of prep—and require only 8 basic ingredients. They’re sweetened with maple syrup and ripe mashed bananas, rather than refined sugar, and packed with raisins. The flavor is mildly sweet and the texture is firm and slightly chewy instead of crispy, which makes them satisfying for adults and kids alike.

What you’ll need for these Easy Oatmeal Raisin Breakfast Bars:

  • Oats (old-fashioned rolled oats preferred; quick oats also work)
  • All-purpose flour
  • Kosher salt
  • Baking powder
  • Cinnamon
  • Maple syrup
  • Ripe bananas (mashed)
  • Raisins

What type of oats should I use?

You can use either old-fashioned rolled oats or quick oats. Rolled oats give a firmer, heartier texture with more noticeable oat pieces. Quick oats yield a softer, more blended texture where the oats meld with the banana. Do not use steel-cut oats—those won’t work here. Avoid flavored instant oat packets, as they contain additives and can change the recipe results.

Substitutions and additions

Honey can be used in place of maple syrup for a similar result (note: do not give honey to children under 1 year old). If you prefer a sweeter bar, swap raisins for sweetened dried cranberries or add a handful of chocolate chips. Other soft dried fruits—chopped dates, prunes, dried figs, or apricots—work well too. Adjust fruit and mix-ins to match your taste.

How to serve and store Easy Oatmeal Raisin Breakfast Bars

Serving ideas

These bars are best warmed slightly—fresh from the oven after cooling or reheated in the microwave for 10–20 seconds. You can also toast them in a toaster oven. They’re delicious plain or topped with peanut butter, a drizzle of honey, or a pinch of sea salt for contrast.

Storage

Store the bars in the refrigerator to keep them fresh, as the mashed banana and lower sugar content make them more perishable than typical cookies. Wrap stacked squares tightly and keep them in the fridge for a few days. For longer storage, freeze wrapped bars; separate layers with parchment if you’re concerned about sticking.
