Summer heat has been relentless this year, and I’ve been leaning on cool, no-bake desserts to stay sane. This s’mores pudding — chilled chocolate pudding layered with graham crackers and crowned with toasted marshmallows — is exactly the kind of easy treat that helps beat the humidity. The contrast of cold, rich pudding and warm, caramelized marshmallows is irresistible.

I picked up the Honeymaid graham crackers, Starbucks Breakfast Blend, Coffeemate creamer, and other ingredients at my local ACME Market during their Anniversary Sale. If you shop the sale at participating Albertsons Companies retailers, you can find great savings on items for this recipe. The sale made stocking up on these pantry staples even easier, and the pudding quickly became a summer staple in my house.

The pudding here is a slight variation on a classic easy chocolate pudding. I replaced some of the whole milk with CoffeeMate French Vanilla creamer and brewed Starbucks Breakfast Blend coffee to add complexity. The creamer lends a subtle vanilla note while the coffee deepens and intensifies the chocolate flavor so it really sings.

I also wanted a true graham cracker crust experience, so I crush the crackers, stir in melted butter and a pinch of salt, and let that layer firm up beneath the pudding. Chilling the assembled jars allows the crust to set and the flavors to meld — the graham layer actually improves the longer it sits.

When it comes to toppings, you can be flexible. Mini marshmallows and regular marshmallows both torch beautifully, or use marshmallow crème or a light meringue if you prefer. Chocolate-flavored marshmallows or other flavored marshmallows also work — feel free to experiment until you find your favorite combination.

Ingredients
For the Pudding
- 1 cup whole milk
- 2 tablespoons cornstarch
- 1/2 cup CoffeeMate French Vanilla Creamer
- 1/2 cup brewed Starbucks Breakfast Blend
- 1/2 teaspoon salt
- 3 tablespoons cocoa powder
- 2/3 cup granulated sugar
- 1 large egg, room temperature
- 2 egg yolks, room temperature
- 3/4 cup heavy cream
- 4 oz dark chocolate
- 2 tablespoons unsalted butter
For the Assembly
- 1 sleeve Honeymaid Graham Crackers
- 5 tablespoons unsalted butter, melted
- Pinch of salt
- Toasted marshmallows
Instructions
- In a saucepan with the heat off, whisk together cold milk and cornstarch until smooth with no lumps.
- Add the creamer, coffee, salt, cocoa powder, sugar, whole egg, and yolks; whisk until fully combined. An immersion blender speeds this step.
- Turn the heat on, add the heavy cream and chocolate, and stir constantly until the mixture thickens noticeably.
- Strain the pudding through a fine mesh strainer into a bowl, stir in the butter until melted, cover with plastic wrap directly on the surface, and chill completely.
- While the pudding chills, crush the graham crackers and mix with the melted butter and a pinch of salt.
- Layer graham cracker crumbs and chilled chocolate pudding in small jars or cups, then top with toasted marshmallows just before serving.
Notes
Store leftovers in the refrigerator. The graham layer firms up as the jars chill, improving texture and flavor.
