How to make this Strawberry Cookies N Cream Pie

Begin by taking the frozen sweetened strawberries out of the freezer and letting them sit at room temperature until mostly thawed — a little ice is okay. Remove the vanilla ice cream from the freezer and let it soften slightly so it’s easy to mix.

Crush or break the Oreo cookies into pieces; using your hands works well for a mix of larger chunks and crumbs.

In a large bowl, combine the softened vanilla ice cream, the mostly-thawed sweetened strawberries, and about 1 1/2 cups of the crushed Oreos. Stir until evenly mixed.

Carefully pour the mixture into a graham cracker pie crust. Because the mixture is slightly icy, it will mound nicely in the center — creating the “mile high” effect. Sprinkle the remaining crushed Oreos on top.

Place the pie on a plate or tray and transfer it to the freezer. Freeze overnight for best results. When ready to serve, let the pie sit at room temperature for about 25–30 minutes to soften enough to slice cleanly.

  • 3 cups vanilla ice cream
  • 2 15.5 oz containers frozen sweetened strawberries mostly thawed
  • 2 cups crushed Oreo cookies divided

Method

 

  1. Pull the frozen strawberries out and let them thaw mostly; a little icy texture is fine.
  2. Crush the Oreos or break them into pieces by hand.
  3. Allow the vanilla ice cream to soften slightly.
  4. Mix the softened ice cream, thawed strawberries, and 1½ cups of crushed Oreos in a large bowl until combined.
  5. Carefully and slowly pour the mixture into the graham cracker crust, pouring into the center so it builds up into a “mile high” mound.
  6. Top with the remaining Oreo pieces.
  7. Place the pie on a plate and freeze overnight.
  8. Let the pie thaw for about 25–30 minutes before slicing and serving.
  9. Store any leftovers covered in the freezer and repeat the short thaw before serving again.
