
I know this isn’t a traditional pizza, but I call it Chicken and Kimchi Pizza — and the name sticks.
This version is quick, flavorful, and savory. It’s simple to prepare and looks beautiful when it’s finished. What more could you ask for?
You can have this ready in under 30 minutes without making dough. Of course, you can use store-bought or homemade dough if you prefer.
For ease, I used tortillas — yes, tortillas. That’s how simple it is.

The most work here was pan-cooking the chicken breast — that’s all. After the chicken is ready, assemble the pizza and bake until golden and bubbly.
You can use pre-cooked chicken from the store, including rotisserie chicken, to save time.
Cheese, kimchi, and chicken are a fantastic combination, so I believe you’ll enjoy every bite of this pizza.
About ingredients — I know not everyone has gochujang or Korean red chili paste on hand.

Many grocery stores carry gochujang and kimchi in the international aisle, not only Asian markets. If you can’t find them locally, check the international section near soy sauce and other condiments.
You can use either homemade or store-bought kimchi. I love making my own, but when I’m short on time I buy a jar — it’s convenient and delicious.
I always keep a jar in the fridge so I can quickly add kimchi to dishes or make a simple stew. I genuinely adore kimchi!

For toppings I like mushrooms and sweet peppers alongside chicken, kimchi, and cheese. I also mix a little gochujang with Thousand Island dressing for a slightly spicy, creamy base. You can use pizza or marinara sauce, but Thousand Island won me over instantly.

Feel free to use whatever ingredients you prefer or have on hand. A softly fried egg on top is a delicious addition that elevates the pie.

Chicken and Kimchi Pizza

Tasty, unique pizza with chicken and kimchi — a perfect match on a cheesy tortilla.
Ingredients
- 1/2 cup cooked chicken breast
- 1 tortilla, medium or large
- 1/2 cup shredded cheese
- 1/2 tbsp gochujang (Korean red chili paste)
- 2 tablespoons Thousand Island dressing
Topping options:
- 1/4 cup kimchi, chopped
- 1/4 bell pepper, chopped or sliced
- 2 mushrooms, sliced
- 2 tablespoons chopped red onion
- 3–4 fresh mozzarella pearls
Garnish options:
- Toasted sesame seeds
- Scallions, chopped
- Red chili flakes
Instructions

Slice the chicken breast into thin strips, season with a pinch of salt and pepper or your favorite chicken seasoning. Cook in a lightly greased skillet for 5–7 minutes, until cooked through. You can also use pre-cooked or rotisserie chicken.

Preheat the oven to 375°F (190°C). You can also prepare these in an air fryer if you prefer.

Mix gochujang with a little pizza or marinara sauce (or spread Thousand Island dressing if you like). Spread the sauce evenly over the tortilla. Use a low-carb tortilla if you need to reduce carbs.

Top with shredded cheese, cooked chicken, chopped kimchi, peppers, mushrooms, red onion, and mozzarella pearls.

Bake 10–15 minutes, until the cheese is melted and the tortilla edges turn golden. Finish with toasted sesame seeds, chopped scallions, and a sprinkle of chili flakes. Serve with extra mayo, ranch, or a simple salad if you like.
Notes
Serving suggestion: a soft-fried egg placed on top makes this pizza even richer.
Mayo on pizza: it’s common in some Korean pizza styles and worth trying if you haven’t.
Thousand Island dressing is a creamy American condiment based on mayonnaise and often includes ingredients like ketchup or tomato purée, vinegar, mustard, and spices. Use store-bought or make your own if desired.
