Mango Lassi Popsicle

I use the term “mango lassi” a bit loosely—traditional mango lassi combines yogurt, mango and cardamom and has a smoothie-like texture. I recently saw a popsicle version made with condensed milk, and that sparked the idea to use cashew milk ice cream instead: its sweetness and velvety texture make it a great stand-in for condensed milk.

The cashew ice cream is rich and smooth (my husband even said it reminded him of dulce de leche). Its natural sweetness and creamy body work especially well in frozen treats, making it a lovely base for these popsicles.

Mango Lassi Popsicles {Gluten Free & Dairy Free}

Ingredients

  • 1/2 cup cashew milk ice cream
  • 3/4 cup mango puree
  • 1/4-1/2 teaspoon cardamom to taste
