I triple-dare you not to fall in love with Crispy Roasted Green Beans. After a quick pre-soften and a short roast in the air fryer or oven, the beans caramelize and become delightfully crinkly—almost melt-in-your-mouth if you follow one simple trick.

These crispy green beans check all the boxes: easy, delicious, low-calorie, low-carb, keto-friendly and gluten-free. They make a versatile side for weeknight dinners or a casual gathering. You can serve them plain, sprinkle with cheese to make green bean “fries,” or dress them up with tomatoes or bacon for something special.

Green bean prep

Rinse and dry the green beans, then snap or trim off the ends with a knife or kitchen shears. Strings are uncommon in modern green beans, but remove them if present.

Practice yields perfect results. After roasting green beans a few times you’ll fine-tune timing and technique. These are the key lessons we’ve learned—tip #1 matters most:

  1. Soften the beans briefly before roasting. This step is like a partial blanch: the beans shouldn’t be fully cooked but should give slightly to the bite. It makes a big difference in texture. Two quick ways to do this:
    • Microwave — Arrange trimmed green beans on a microwave-safe plate with 2 tablespoons of water, cover, and microwave on high for 2–3 minutes. This is fast and keeps cleanup minimal.
    • Boil — Bring about 3 quarts of water to a boil for every 16 ounces of beans and cook for roughly 3 minutes.
  2. Coat each bean with oil. Don’t be stingy—use a spritzer or drizzle and toss so each bean is evenly coated. Excess oil will drip off during cooking.
  3. Toss or shake midway through cooking. This prevents uneven browning. Shake the air fryer basket or flip the beans with a spatula on a baking sheet.
  4. Preheat the baking sheet for oven roasting. Heating the sheet first gives you a head start on browning and improves crispiness.

Air fryer notes

If you have an air fryer, it’s a great tool for these green beans.

  1. Preheat the air fryer 3 minutes at 390°F to jump-start the cooking. If you skip preheating, add a few minutes to the cook time.
  2. One 4-quart air fryer (we use a Ninja 4 Quart) handles about 1 pound of beans. For larger batches, roast in batches or use the oven.
  3. Beans may overlap in the basket; that’s fine if you shake it periodically so each bean gets some time against the hot surface. For the most even results, cook in a single layer and work in batches if needed.

One advantage of the air fryer: you can easily pause and check the beans. Pull out the basket and test a bean to see if it’s reached your desired level of crispness.

Note: Always follow your appliance manufacturer’s instructions if they differ from these guidelines.

Make ahead notes

Serve crispy roasted green beans straight from the oven or air fryer for best texture. You can trim, blanch (and shock in cold water to stop cooking), and oil the beans a day ahead so they’re ready to roast when you are.

Ingredients

  • 16 ounces green beans ends trimmed
  • 1 Tablespoon olive oil
  • salt and pepper to taste

Instructions

Preparation – either cooking method

  • Place green beans on a microwave-safe plate with 2 tablespoons water, cover and microwave about 2 minutes to slightly soften the beans.
  • Pour off excess water and pat the beans dry. They will be hot. Using tongs, toss with olive oil and season with salt and pepper.

Air Fryer Instructions

  • Preheat air fryer to 390 °F for 3 minutes.
  • Cook about 7 minutes, shaking the basket halfway through.

Oven Instructions

  • Preheat oven to 450 °F. For best results, preheat the baking sheet as well.
  • Arrange the beans in a single layer on the sheet and cook about 10 minutes, tossing halfway through.

Air Fryer Notes

  1. Preheat the air fryer for 3 minutes at 390°F for best results; otherwise add a few minutes to the cook time.
  2. A 4-quart air fryer is suitable for about 1 lb of green beans. For larger quantities, roast in batches or use the oven.
