Ingredients

  

  • 1 (15 oz) can pumpkin
  • cups honey
  • ¼ cup unsweetened applesauce
  • ¼ cup Vegetable oil, such as cold-pressed Sunflower
  • 3 large eggs
  • 1 teaspoon vanilla
  • 2 cups wheat bran see shopping tips
  • cups old fashioned rolled oats
  • 2 teaspoons pumpkin pie spice
  • teaspoon baking soda
  • ¾ teaspoon salt
  • 1 cup dried cranberries or raisins

Instructions

 

  • Preheat the oven to 350°F (175°C). Thoroughly coat a muffin pan with a cooking spray that contains flour — this helps prevent sticking since these muffins are low in added fat.
  • In a large bowl or in the bowl of an electric mixer, combine the pumpkin, honey, applesauce and oil. Stir until smooth.
  • Add the eggs and vanilla, then mix well until fully incorporated.
  • Stir in the wheat bran, rolled oats, pumpkin pie spice, baking soda and salt. Mix until combined, then fold in the dried cranberries or raisins.
  • Spoon the batter into the prepared muffin cups, filling them nearly to the top. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
  • Allow the muffins to cool in the pan for about 10 minutes. Carefully loosen each muffin with a spoon or a dull knife before removing them from the tin.
  • If you need to bake in batches, wash and re-spray the pan before baking the remaining muffins.
  • Once completely cool, wrap each muffin in plastic wrap and store at room temperature for a few days, or freeze individually wrapped muffins in a sealed bag for longer storage.
