Ingredients
- 1 (15 oz) can pumpkin
- 1½ cups honey
- ¼ cup unsweetened applesauce
- ¼ cup Vegetable oil, such as cold-pressed Sunflower
- 3 large eggs
- 1 teaspoon vanilla
- 2 cups wheat bran see shopping tips
- 1½ cups old fashioned rolled oats
- 2 teaspoons pumpkin pie spice
- 1¼ teaspoon baking soda
- ¾ teaspoon salt
- 1 cup dried cranberries or raisins

Preheat the oven to 350°F (175°C). Thoroughly coat a muffin pan with a cooking spray that contains flour — this helps prevent sticking since these muffins are low in added fat.

In a large bowl or in the bowl of an electric mixer, combine the pumpkin, honey, applesauce and oil. Stir until smooth.

Add the eggs and vanilla, then mix well until fully incorporated.

Stir in the wheat bran, rolled oats, pumpkin pie spice, baking soda and salt. Mix until combined, then fold in the dried cranberries or raisins.

Spoon the batter into the prepared muffin cups, filling them nearly to the top. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.

Allow the muffins to cool in the pan for about 10 minutes. Carefully loosen each muffin with a spoon or a dull knife before removing them from the tin.

If you need to bake in batches, wash and re-spray the pan before baking the remaining muffins.

Once completely cool, wrap each muffin in plastic wrap and store at room temperature for a few days, or freeze individually wrapped muffins in a sealed bag for longer storage.
