TIP OF THE WEEK

Let’s talk kale. When using kale in the Zuppa Toscana soup, remove the tough stems and central ribs before chopping—the leaves are what you want. Washing the leaves after cutting can reduce some of the natural bitterness. If kale isn’t for you, substitute fresh spinach for a milder flavor and similar nutrition.
