- 1/2 avocado
- 1 serving bell pepper sticks
- 1 serving cucumber sticks
- 1 serving smoked or marinated tofu
- 1 serving edamame (optional)
- 1 serving sugar snaps (optional)
- 1 serving toasted nori
- 1 serving toasted sesame seeds

- 150 grams oyster mushrooms
- 1 tbsp soy sauce
- 1 tbsp agave or maple syrup
- 1 tbsp sesame seeds
- 2 tsp garlic chips
- chilli pepper

Cook short-grain rice according to package directions. While the rice cooks, prepare the oyster mushrooms (recipe below) and slice the vegetables and tofu. Optionally roast sugar snaps and toast sesame seeds for extra flavor. Assemble the bowl: place rice in the base, arrange avocado, bell pepper, cucumber, tofu, edamame and sugar snaps on top. Add toasted nori and sesame seeds, then serve with soy sauce, wasabi or your preferred condiments. Enjoy.

Heat a skillet over medium-low and sauté oyster mushrooms until golden brown, about 4–5 minutes. Add soy sauce, agave (or maple), sesame seeds, garlic chips and chopped chilli pepper; cook another minute until well glazed. Sprinkle with sliced spring onion when serving. Use as a flavorful topping for your sushi bowl.
